"Country Days and Rockin' Nights"

Yes, it's Fair time.  The California Mid-State Fair to be exact.  A time to enjoy corn dogs,  Rodeo, midway rides, stock shows,  or people shows.  If you've never been to the "Fair"  it's a fun time, the largest fair in California.  Opening July 25th and running though August 5th it's a must attend by all. 

Some great concerts are lined up this year:  Bob Dylan, Stevie Nicks, Aerosmith and the "Evening of Wine and Music" is Chris Botti.  I'm not sure I can wait.  The idea of sipping a great Paso wine and listening to the trumpet of Chris Botti live under the stars.  If you've never experienced a  "Evening of Wine and Music" concert, it is truly one of the best concert experiences anywhere.

Pick-Up Party: I had the pleasure of attending a recent "Pick-up Party" of Edward Sellers.  I thought the name was catchy,  but most important, it was a lot of fun and well done.  It was an opportunity for Wine Club members to pick up their shipments and taste the current releases.  What made it fun was the pairings created.  The wines were carefully paired with selected cheeses and Hors d’œuvres.   So as each wine was poured, you were instructed to select the appropriate appetizer. 

Edward Sellers is a new name to the area, but the wines are excellent and I'm sure will become a major part of the Paso wine industry.  Of all the wines tasted, I would classify 3 as excellent. I don't normally find that many wines from one winery that I like that well.   My favorites of the evening were an excellent 2004 Grenache;  a 2005 Rhone blend, Cognito; and an excellent 2004 Syrah.  Wine Spectator has given the 2004 Syrah a 91.

At the Paso Wine Festival this year someone had the above slogan on a T-Shirt.  I love it and hope the owner doesn't mind me using it.

Cooking Corner:  (Personal recipes and views on Cooking Paso Style)
I've been experimenting with a new rub for pork.  Since this is still an experiment in flavor, I'd love to hear from everyone on what they think of the flavors.
  1 tbsp Fennel Seeds
  1 tbsp Red Chili Powder
  2 tsp Cumin 
  1 tbsp Garlic Powder
  2 tsp Salt
  1 tbsp Cocoa
  2 tsp Ground Cloves
  1 tbsp Ground Allspice
  2 tsp powdered Chipotle
     Toast the Fennel Seeds in a skillet over medium heat until they start to brown. Place in a small food grinder and grind until a fine powder.  Add other ingredients and blend together. 
     Rub on thick cut port chops and allow to sit for 30 minutes.  Grill over low heat until done.  Remember to not over cook the pork.   Enjoy

Paso Style Living Real Estate: (Real Estate market conditions in Paso Wine Country)
So how long will the buyers market last? No one knows the answer to that question,  but a signal to look for are average and median home prices dropping.  Yes! When the home price indicators drop, it means the excess inventory is starting to move.  As the excess inventory levels decline we will see a shift back to a Sellers market.  Remember,  People don't get the best deals in Real Estate watching the market indicators.  They get the best deals by influencing the indicators.  If you want to get the best deals, seek out homes that have been on the market the longest, ask for concessions, and be prepared to do some updating.  There are some deals out there for sure.   (Single Family Homes, SFRSB)
