Pinot and Paella
On Sunday, June 11th at the Templeton Community Park the stage is set for
the third annual Pinot and Paella Cook-Off.
Paella is a Spanish rice dish. Paella is also the Valencian word for "frying
pan". However, the dish has become so popular that paellera is more
commonly used for the pan and paella almost exclusively for the dish.
Some of the best chefs of the area will compete with original Paella recipes
paired with a dozen Paso Robles Pinot Noir wines. This event is the brain
child of Marc Goldberg and Maggie D'Ambrosia owners and operators of
Windward Vineyards.
The third annual Pinot and Paella Cook-Off is a wonderfully fun event.
Nineteen chefs compete good naturedly against each other with 19 unique
Paellas.
The proceeds from the event will go to the Paso Robles Youth Arts
Foundation.

review of local Paso Wines)
Black Hand -
Pinot Noir, 2004
Paso Robles is a very warm wine growing area which produces excellent
Bordeaux and Rhone Reds, but it also has micro climates which produce very
good Pinot Noir.
Black Hand is an up and coming winery (www.blackhandcellars.com)
on the West Side The winery is located West of San Miguel and acquires
Pinot Noir fruit from one of these micro climate areas. Although Black
Hand is a new winery and 2004 is their first Vintage they have done an
excellent job with this Pinot. It has good body, excellent fruit,
and retains the characteristic Pinot flavor. If Black Hand can continue
producing wine of this caliber they can become an great wine producer. My
rating: GOOD.

In Tennessee, North
Carolina, and South Carolina it's pulled pork shoulder slow cooked over
Hickory smoke. In Kansas City its Pork or Beef Ribs slow cooked over
Hickory coals. In Texas it's Beef Brisket slow cooked over open mesquite
coals. In Paso Style country it's Santa Maria Tri-Tip slow cooked over open
oak coals. Regardless of the cooking style, good Barbeque starts with a
good rub
Here’s my own special recipe for a flavorful and unique rub. It works well
on pork, beef, or chicken. It has some interesting flavor characteristics
that will get raves from everyone.
Combine equal parts Garlic Powder, Ground Chipotle Peppers, and Ground All
Spice. Rub gently into the meat an hour prior to cooking.
Warning, Chipotle Peppers are smoked Jalapenos and can be very spicy.
So If you don’t like it spicy, reduce the amount of Chipotle accordingly.

slowing, home sales nationwide down 21%, the sky is falling. Well,
locally things have slowed from the un-sustainable pace of recent
past, but we are still in a sellers market. The generally accepted
